Recommended settings

  1. Walls

    Start at 1.2–1.6 mm; go thicker for large cutters.

  2. Stamp

    0.6–1.0 mm depth gives clean impressions without tearing dough.

  3. Rim

    0.5–1.0 mm for a comfortable press; add a rim on larger sizes.
